Throw 2c of cooked & well drained black beans, 1/2 cup of cocoa powder, 1 capful of flavor extract of your choice, 1/4 c shredded coconut, 1/4 to 1/2 cup low glycemic sweetener of your choice, such as coconut nectar, into a food processor. Blend until mixture forms a ball. Form into cookies. Bake at 380 degrees for 12-15 mins.

You might try a batch with cayenne pepper added, too. Sometime hot and chocolate go together. I have a Christmas cookie with cayenne in it and it is better than expected.

Thanks, Chris. I used cayenne a while back when I experimented with black bean brownies, but forgot about it with the cookies. It does add a nice touch — another layer of flavor.
Add chopped walnuts
Walnuts add excitement to almost anything… especially cookies!

A Very Popular Combination
Chocolate and cayenne are a well known culinary coupling- particularly in Latin cuisines. A rich, spicy mole’ sauce is probably the most well known. Many artisan chocolate makers have used this wonderful combination for some of their most popular creations.
